The Saturated Fat Paradox
Eating saturated fat does not automatically increase cardiovascular disease (CVD) risk. Risk correlates with the level of saturated fats circulating in your blood, not what is on your plate.
The Burning Analogy
To understand why intake doesn't equal blood levels, use the "bonfire" analogy:
The High-Carb State: Your metabolism is a tiny fire choked with kindling (carbs). If you add heavy logs (saturated fat), they don't burn; they just pile up on top (your bloodstream).

The Keto-Adapted State: Your metabolism is a roaring bonfire. You can toss in large logs, and they vanish into heat and energy immediately. This is called fat oxidation: your body becomes a fat-burning machine.
